FSM x Saratoga Opera 5-Course Italian Wine Dinner

Wine, food, and song — the true elixirs of love.

Celebrate the start of Opera Saratoga’s summer season with an unforgettable evening at Franklin Square Market. This intimate Italian wine dinner features five seasonal courses paired with five exceptional Italian wines, thoughtfully curated and presented by Italian Wine Scholar Annette Tomei.

Throughout the evening, guests will be treated to live opera performances introduced by Opera Saratoga’s Artistic & General Director Mary Birnbaum, bringing the magic of the stage into the warmth of our dining room.

Chef Mark Delos will create a beautifully crafted Italian-inspired menu designed to complement each wine pairing. Guests will dine together at cozy communal tables, making this a festive, shared experience celebrating the flavors and artistry of Italy.

With only 30 seats available, this special evening promises an intimate and memorable start to the opera season.

Inspired by Letitia Clark’s Italian-inspired cookbook devoted to the humble lemon, come learn how to get the most delicious results out of this diverse and beloved ingredient. We’ll cover everything from zest to oil to juice and pulp, as we put every bit of the lemon to work and explore how this citrus fruit works to enhance both sweet and savory dishes.

Chef Annette will share some of her favorite recipes, demo a variety of zesting techniques, and teach you how to make your own preserved lemons, a chef’s pantry essential. And we’ll taste lemon in all its glory!

Learn the basics of the big four: Classic Shio Ramen, Tokyo-style Shoyu Ramen, Sapporo Style Butter Miso Ramen, and Fukuoka-Style Tonkotsu Ramen. Cook (and eat!) Mac ‘n Cheese Ramen. Just in time for Fall’s bounty, Franklin Square Market’s studio kitchen classes kick off with a back-to-basics class taught by Chef Annette Tomei. 

Even if you’ve been cooking for years, chances are you’re still not as confident as you’d like to be when it comes to your knife skills. Most home cooks aren’t, but you can still learn the “right way,” which will lead to more enjoyable and efficient kitchen experiences. 

Join Chef Annette as she guides you to a better understanding of your kitchen knives and teaches you how to slice, dice, and chop like a pro. You’ll learn knife safety, how to choose the correct knife for the job, classic French cuts and shapes (chiffonade, julienne, battonet, et al.), and how to organize your ingredients for maximal kitchen prep.
